No-Bake Superfood Breakfast Bars

This recipe is from “Joyous Detox” by Joy McCarthy 

makes 12 Bars

1 cup old-fashioned rolled oats

3/4 cup dried cranberries 

3/4 unsweetened, unsulphured shredded coconut 

1/2 raw sunflower seeds 

1/4 cup chia seeds

1 tbsp cinnamon

1 tsp pure vanilla extract 

1/2 cup almond butter ( or sunflower seed butter for a nut-free option) 

2 bananas, mashed 

Zest of 1 organic orange 

1/2 vanilla, chocolate or natural-flavour protein powder

1/4 cup coconut oil, melted 

 

Combine all ingredients in a large bowl and mix well. Press into 9-inch square pan and refrigerate for 4 hours. Cut into squares and enjoy. Store in the fridge or freezer.
