Chickpea Cookie Dough Balls

No Cook Time

 1 cup rolled oats
 1 can chickpeas drained and rinsed
 ¼ cup Sun Butter (nut free option) or you could do Peanut butter or Almond Butter
 ¼ cup Tahini (for added protein)
o If you don’t mind the taste of tahini do ½ cup all tahini
 8 Medjool dates pitted
 1 teaspoon Vanilla extract
 ½ tsp salt
 ½ cup dark chocolate chips + more for drizzling

Add Oats to a food processor and pulse until flour consistency
Add chickpeas, butter/ tahini, dates, vanilla, salt. Process until a sticky ball forms
Add chocolate chips and pulse a few times
Roll into Balls and store in the fridge of freezer
If you desire melt some chocolate and drizzle of the balls.
